TOMATO BRUCHETTA

TOPPING:: mix together and keep aside for at aleast 30mins

4tomatoes-pulp removed and chopped finely
6-8 flakes garlic-chopped very finely(1tsp)
1/2 tsp dried oregano
2-3 tbsp olive oil
1tbsp balsamic vinegar(Even normal vinegar works well)
1/2 tsp salt and 1/2tsp freshly ground peppercorns or to taste

BREAD::
a small french bread-cut into 1/2" thickness,about 18-20 slices
4tbsp pure olive oul,2-3 flakes garlic-crushes(1/2tsp)

1.Cut each tomato into 4 pieces and gently remove all the seeds and pulp.Chop the deseeded tomatoes into very small pieces
2.Mix all the other ingredients with chopped tomatoes and keep aside for 30mins for the tomatoes to absord the flavour
3.for the bread,mix 2-3 crushed garlic flakes with 4tbsp olive oil
4.Spoon 1/2 tsp of this flavoured oil on each slice and spread it on both sides of the slice with the back of the spoon.Keep aside till serving time
5.At serving time,bake the bread slices in a pre-heated oven at 200"C for 10mins till each if lightly toasted and crisp.
6.Spread 1heaped tbsp of tomato mixture on the toasted slice.

You Can use mushroom instead of tomatoes.
